Slack only shows recent conversations

Background:

Slack only shows the latest ~6 conversations under Connections and Direct messages. Super annoying if you're trying to find that group chat you were just in with your Client!

Fix is simple - if you move the conversation into a "Section" it stays visible (afaict).

Right click on conversation > Move to > ...
